Alternative Names: Ocean Whitefish

Monterey Bay Recommendation: Buy blue tilefish ("amadai" in sushi) caught in the U.S. South and Mid-Atlantic. Then look for blue or blueline tilefish from the U.S. Gulf of Mexico, but know that these sources have bycatch of threatened sea turtles. Steer clear of blueline tilefish caught in the U.S. South Atlantic.

Uses in Cooking: These can be grilled, fried, baked, broiled, or poached. These have a high mercury risk and it is recommended that pregnant women and young children avoid it. Others should limit consumption.

Description: This fish is mild and white with high yields. It is easy to work with and looks great on the plate. The flavor is pleasant and unique.

Fun Facts: Tilefish were commercially important in the 1800s, but in 1882 after a tropical storm, there was a mass die off. They were believed to be extinct until 1910 when they were rediscovered.
