Monterey Bay Recommendation: Buy tilapia ("izumidai" in sushi) farmed worldwide in recirculating aquaculture systems, Ecuador in ponds and Peru in raceways. Then look for a "Good Alternative," but know that these sources have environmental issues.

Uses in Cooking: Tilapia are versatile and easy to cook. Can be used in any method except smoking and sashimi.

Similar Fish: Speckled trout, largemouth bass, cod

Description: This is one of the most mild fish available, with a firm texture and medium flakes. They come in convenient sizes and are a good beginner fish.

Fun Facts: Tilapia are sensitive to cold temperatures but are otherwise extremely tough. They can tolerate dirty water, overcrowding, low oxygen levels, and salinity changes. The Salton Sea in California for example, contains tilapia, despite the fact that it has become so salty that almost nothing else can live there.
