Uses in Cooking: These are typically roasted whole or grilled with the skin on. They do not hold together well without the skin, so a boneless and skinless fillet would need to be baked, broiled, or sauteed.

Similar Fish: Red Snapper, tai Snapper, Golden Snapper.

Description: This is a softer snapper, so the meat should be handled gently and the skin left on if possible. They have an extremely mild flavor with a bright white meat.

Fun Facts: This fish is easily as delicious as true red snapper, but it is among the long list of cheaper imposters that are commonly sold as red snapper. Many large chain restaurants will substitute this fish.
