Alternative Names: Steelhead (once it has reached the ocean)

Monterey Bay Recommendation: Aquacultured Rainbow trout are best choice while wildcaught are a good alternative. Avoid wildcaught trout from Washington Chehalis river and Hoh river.

Uses in Cooking: Often cooked whole over campfires, these fish can be baked, breaded particularly with nuts and pan fried. Large fish can be filleted and grilled.

Description: This light pink to deep salmon colored meat is more mild in flavor than most salmon. They can be sweet with a flavor reminiscent of the smell of clean water. Any trout sold in the US will be farm raised and not as flavorful as the wild trout you can catch for yourself.
