Petrale Sole

Monterey Bay Recommendation: Good Alternative, except those from the California groundfish collective fishery which are a best choice.

Uses in Cooking: Can be baked, broiled, fried, or sauteed. Petrale are often served stuffed with shrimp, crab, or sausage.

Similar Fish:  Rex Sole, Dover Sole, Gulf flounder

Description: Considered a premium flounder, these are highly regarded. They have a clean, almost hazelnut flavor with small flakes. The meat is more firm than many other small flatfish, but softer than most fish.

Fun Facts: A large female can produce up to 1.5 Million eggs.
