Uses in Cooking: Due to the small size and hard bones, these are mostly cooked whole on the grill or fried.

Similar Fish: Golden Pompano, White Pomfret, Amberjack

Description: This is a thin fish with tough skin and so filleting is not a great option. The meat is white to light grey and oily. The flavor is pronounced, but pleasant and briney and the meat flakes into small bits.

Fun Facts: This fish looks like it has grill marks on it when it is still alive.
