Alternative Names: Chinook, spring salmon

Monterey Bay Recommendation: There are a few best choices including recirculating systems worldwide, Net pens in New Zealand, and Wild caught Alaskan King Salmon. Beware though, there are many bad options as well.

Uses in Cooking: Can be baked, broiled, grilled, sauteed, smoked, or eaten raw.

Similar Fish: Sockeye salmon, rainbow trout, arctic char

Description: Among the highest oil fish, this is a great source of Omega-3s. It has a pronounced flavor and a soft velvety texture. It has large flakes and deep pink to red orange flesh.

Fun Facts: Kings, like all salmon give their lives to reproduce. They begin dying as soon as they start their migration upriver and their bodies actively deteriorate as they travel using all their energy to migrate, breed, and guard their nests before they perish.
