Monterey Bay Recommendation: No recommendation. Seldom eaten in the US.

Uses in Cooking: Makes a great fish and chips or fried fish sandwich. I haven't seen it any other way.

Similar Fish: Branzino, Red snapper, Tai snapper

Description: This meat is mild in flavor and sweet, but unique. It has a small tight flake and firm texture which is bright white.

Fun Facts: The increase in popularity of the flying fish as a food has led to a heated dispute over territory between Barbados and Trinidad and Tobago.
