Monterey Bay Recommendation: Buy bluefish caught with handlines. Then look for bluefish caught with bottom gillnets or trawls, but know that there are interactions with protected species.

Uses in Cooking: This fish should be broiled, baked, or grilled with aggressive flavors. It should be cooked fully to reach a firm texture. Undercooked bluefish is mushy.

Description: This fish is considered by many to be strongly flavored and fishy. The high level of oil in the meat causes it to deteriorate quickly. To give this a fair shot, it should be quickly processed and consumed as soon as possible. When handled correctly it is soft and delicate with a moderate sweet flavor.

Fun Facts: Bluefish go into feeding frenzies like pirahnas in bad movies. They have been known to bite the fingers of fishermen and attack swimmers as well as chew up baitfish even after they can't eat anymore.
