Alternative Names: Black Rockfish, Marbled Rockfish

Monterey Bay Recommendation: Good alternative, except those from Mexico, which are listed as avoid.

Uses in Cooking: These can be baked, broiled, fried, grilled, or steamed. They do not hold up well when poached.

Similar Fish: Pink Grouper, Ocean Perch, Vermilion rockfish

Description: This fish is more firm than other groupers, but softer than most snappers. The meat is mild flavored and low in oil. It has very little connective tissue, so they break up easily if handled roughly.

Fun Facts: These fish range from Massachusetts to Brazil in the Atlantic, but strangely, the adults, which can reach over 200 lbs, do not travel to the northern portion of the range.
