Alternative Names: Hardhead

Monterey Bay Recommendation: Buy Atlantic croaker ("nibe" in sushi) caught with beach seine nets. Then look for Atlantic croaker caught with gill nets and entangling nets, traps or trawls, but know that these sources have bycatch of protected species.

Uses in Cooking: Pan fried whole. Larger specimens can be filleted and grilled, beer battered, or baked.

Description: This generally small fish has a delicate to medium firm flesh with small loose flakes and a mild flavor.

Fun Facts: The name croaker comes from the loud croaking sound made when this fish vibrates muscles against its swim bladder.
